Sandy Balls holiday centre, located in the new forest has opened a new Bistro restaurant in the heart of its leisure complex, near Fordingbridge in Hampshire.
The kitchen is ventilated using a Heydal ventilated ceiling system from Britannia Kitchen Ventilation Ltd. The Heydal ceiling was chosen as it provides a clean line of sight across the kitchen, rather than utilising conventional extract canopies which can prove to be unsightly, especially as the kitchen is on view to diners.
Grease filtration is achieved through double skinned perforated extract modules. The design of the modules ensures that the seperated grease cannot drip back on the cooking surfaces and is retained in the modules and collection troughts.
Fire risk is a major concern in modern commercial kitchens and needs to be carefully considered when designing the extract system. The void above the Heydal ceiling is divided into exhaust and supply air plenums with leak tight vertical partitions ensuring the structural void is grease free, minimising the fire risk within the kitchen structure.
Manufactured entirely from stainless steel, the ceiling provides in excess of 1 hour fire resistance and is easily demounted and reconfigured to accomodate changes in cooking equipment layout, again providing greater flexibility when compared to conventional canopy units.
The Heydal ceiling is availble in satin stainless steel, or powder coated finish to suit particular architectural requirements and lighting is provided by means of integrated sealed light units designed to achieve 500 lux on the working surface below.
Mechanical and electrical services were housed in stainless steel distribution units running down from the ceiling to serve the cooking equipment below, as services within kitchens now must be easily cleaned to avoid potential health hazards.
